Breakfast Pizza

All the yumminess of bacon and eggs on a pizza crust- brilliant! I made this breakfast pizza for dinner, but it would be a fun breakfast if you were serving a crowd too. Top the pizza with all your favorite omelet ingredients, precooking them before adding them, just as you would any omelet or pizza topping.

Tips:

  • I had a few leftover potatoes from Melting Potatoes so I diced them and added them to the pizza before baking it. Great time to use leftovers in the refrigerator.

  • You can swap out the pizza dough for hash browns. Just press the shredded potatoes into pie plate and prebake them before topping with the rest of the ingredients.

  • Be careful when adding the eggs to the pizza crust. The whites will slide off the dough if you don’t nestle them in the cheese or toppings.

  • If you don’t like a runny egg, you can make this with scrambled eggs too.

Breakfast Pizza

Serves 4-6

PREP 60 minutes

COOK 20 minutes

INGREDIENTS

Pizza Dough Recipe

Olive oil

4-6 large eggs (use 1 egg per person)

1 1/2 cups shredded cheese- one or a mix of cheddar, American, goat…

Kosher salt and freshly ground black pepper

6 slices bacon

Freshly chopped chives or parsley, for garnish

DIRECTIONS

  1. Make or buy your pizza dough and keep at room temperature until you are ready to bake.

  2. Preheat oven to 400° degrees.

  3. Cook your bacon until crispy either in a skillet, oven or in the microwave. Drain the bacon on paper towel, then chop it into bite-size pieces.

  4. Prepare your pizza dough by stretching it flat. Pinch together any holes you create when stretching it. If the dough is shrinking back when you try to stretch it, allow it to rest for 15 minutes, covered.

  5. Place your dough on a lightly greased baking sheet and bake it for about 8 minutes.

  6. Remove it from the oven and place the cheese evenly on top. Crack 4-6 eggs on top of the dough (depending on how many people you are serving). Sprinkle the bacon all over and season with salt and pepper. Drizzle some olive oil on top and pop it into the preheated oven.

  7. Bake the pizza until the whites of the eggs are set and the yolks are still runny, about 15-18 minutes.

  8. Garnish the pizza with chives or other fresh herbs. Enjoy!
