Chocolate Ganache

This ganache is so simple to make and can be used in many dessert recipes. The addition of coffee granules brings out the flavor of the chocolate, without leaving any coffee flavor. This is delicious as a filling for cakes, a decoration for cookies, the filling for sandwich cookies and even as the filling for truffles.

Chocolate Ganache

Makes 1/2 cup

PREP 5 minutes

COOK 5 minutes

INGREDIENTS

8 ounces good semisweet chocolate chips

1/2 cup heavy cream

1 teaspoon instant coffee granules

INSTRUCTIONS

  1. In a double boiler In a medium, heat-proof bowl over a double boiler, add all your ingredients.

  2. Stir until the chocolate has melted and is glossy and fluid.

  3. In the microwave Place your heavy cream in a microwave safe boil. Heat the liquid for about 30 seconds or until it is hot. Add the coffee granules and stir then add the chocolate. Stir until glossy and smooth.

  4. To coat Shortbread Cookies Spoon ganache onto cookies while it is warm.

  5. To make Truffles Place bowl of ganache in the refrigerator until the chocolate sets, about 30 minutes. Use a small ice cream scoop to make your truffles. Freeze them before coating in melting chocolate.

  6. To make Holiday Sugar Cookie Wrappers Chill ganache until it has set, about 15 minutes.
