Lemon Roasted Broccoli with Parmesan

Broccoli is one of those vegetables that most people like. It is prepared at least once a week at our home, which means I’m always looking for a new way to prepare it. Roasting and grilling broccoli is a wonderful way to enhance the vegetable. It brings out sweetness and so much flavor, leaving the florets still slightly crisp. Adding the brightness from lemon and the saltiness from parmesan is a wonderful compliment. Try this along with our Spatchcock Roasted Chicken.

Lemon Roasted Broccoli with Parmesan

Serves 6

PREP 10 minutes

COOK 25 minutes

INGREDIENTS

2 bunches broccoli

4 garlic cloves, peeled and thinly sliced

Olive oil

Kosher salt and pepper

Zest of 1/2 lemon and the juice

1/3 cup freshly grated Parmesan cheese

INSTRUCTIONS

  1. Preheat the oven to 425 degrees.

  2. Trim the broccoli by cutting off the tough ends and cutting off the florets, keeping the stems long. The stems get tender and it’s a prettier presentation.

  3. Place the broccoli and sliced garlic on a baking sheet. Drizzle with olive oil, salt and pepper. Mix well and spread it out in a single layer.

  4. Roast the broccoli for about 20-25 minutes, until charred in some spots, bright green and tender.

  5. While the broccoli is roasting create the garnish. In a small bowl combine the lemon zest, lemon juice, and 2 tablespoons of olive oil.

  6. When broccoli comes out of oven toss the lemon mixture on top. Give it a mix then spread the parmesan cheese on top. Enjoy warm.
