Old Fashioned Pancakes

In my home, Sunday mornings are for pancakes. Sometimes there’s a pound of bacon with them. Other times it’s just some fresh fruit. I like to make a giant batch so that during the week the kids can warm up a pancake for breakfast. Although there are some really good pre-made mixes out there, making it from scratch is really simple and you can customize it. You can mix all the dry ingredients together and store that in your pantry in a mason jar for pancakes all monthlong. Just add the wet ingredients to the mix and it’s as simple as can be.

Tips:

  • A mason jar filled with the dry pancake mix makes a great hostess gift basket. Add some good maple syrup, maybe a whisk and pancake bowl along with a tag with the instructions. So cute!

  • Don’t want to flip pancakes? Put the batter in a greased sheet pan and cook one giant pancake at 350 degrees for 10 minutes or until golden brown and pulling away from the sides. No need to flip. Just cut into squares and serve. Perfect for a crowd.

Old Fashioned Pancakes

Makes 8 pancakes

PREP 5 minutes

COOK 15 minutes

INGREDIENTS

1 ½ cups all-purpose flour

3 ½ teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 ¼ cups milk

1 egg

3 tablespoons butter, melted

1 teaspoon ground cinnamon, optional

Coconut oil or butter for greasing the pan

INSTRUCTIONS

  1. In a large bowl, whisk together the flour, baking powder, salt, sugar and cinnamon, if using. At this point you can store the dry ingredients in a mason jar for another day.

  2. In a measuring cup combine the milk, egg and melted butter. Add this to the dry ingredients and mix until combined. Don’t worry if there are lumps. It’s better to undermix than overmix.

  3. Heat a 8” frying pan or a griddle over medium heat. When hot add your fat. I like to use coconut oil, but butter is delicious too.

  4. Add a ladle full of batter to cover the bottom of the frying pan, about 1/2 cup. Cook the pancake until the edges are golden brown and the top stops bubbling. Flip and continue to cook until that side is golden brown too.

  5. Serve with real maple syrup, confectioners sugar, fresh fruit, a pat of butter or whatever your family loves. How about Nutella?!
