Stir-Fried Lo Mein Noodles with Chicken

I was recently brought to an Asian market that carries a huge variety of fresh noodles. Naturally I had to buy a few packages to test out. The first thing I noticed was the length of the noodles. One pound of noodles seemed to be one giant noodle coiled around and around. My kids thought this was great. The other thing I noticed and most important to me, was the texture. Fresh noodles have a wonderful chewy texture when cooked. Not mushy and not like an al dente Italian pasta dish. It’s wonderful.

Tips:

  • This is what I had in my refrigerator for the dish and likely it will be a different set of ingredients when I make it next time. Use what you like and is fresh.

  • You can make this dish with dried noodles or frozen ones too.

Stir-Fried Lo Mein Noodles with Chicken

Serves 6

PREP 15 minutes

COOK 5 minutes

INGREDIENTS

1 lb. fresh lo mein noodles

1 carrot, peeled and julienned

2 scallions, cut on the bias, divided

3/4 lb. chicken breast, cut into thin slices

3 to 4 ounces fresh Enoki mushrooms or any mushroom you like

6 ounces fresh baby spinach

Bunch of baby bok choy

1 tablespoon oil

1 tablespoon sesame seeds

SAUCE

7 tablespoons soy sauce

6 tablespoons brown sugar

4 tablespoons sesame oil

2 cloves garlic, grated

1 teaspoon ginger, grated

1 tablespoon rice wine vinegar

INSTRUCTIONS

  1. In a medium mixing bowl combine all the sauce ingredients. Whisk until the sugar begins to dissolve. Set aside.

  2. Boil water for the noodles and cook according to the package directions. The fresh noodles I made took just 5 minutes. Drain when cooked.

  3. Place a wok or large skillet on a high flame. Add oil and stir fry the chicken until cooked through, about 5 minutes. Add a splash of the sauce and stir the chicken in it.

  4. Add the heartier vegetables to the hot pan and cook for a few minutes to soften the carrot and bok choy. Add spinach, half the scallions and mushrooms and cook for just a minute to wilt. Add the remainder of the sauce and bring it to a simmer.

  5. Add the cooked noodles and stir to combine the sauce with the noodles, bringing it all together.

  6. Sprinkle sesame seeds and remaining scallion on top and serve.
