Weeknight Pad Thai

I love Pad Thai. Takeout is decent, but the Bon Appetit recipe is so simple and the videos here are so helpful, that Iā€™m not going to try to duplicate it. I did not have Tamarind paste when I made the dish and it was still delicious. Also, I was serving fish haters, so we just used chicken. No one knew that there was fish sauce in the sauce, since it adds a depth and saltiness to the dish, despite the smell. This is one of those recipes that comes together quickly, so make sure everything is measured and cut before you start to cook.
