Cherry and Ricotta Toast

Here is a “no need for a recipe”, recipe. In August, when the cherries are at their peak, this toast is a wonderful combination of salty and sweet and creamy and crunchy. Ricotta is a delicious base for the toast and any sweet fruit would be a great substitute for the cherries. Try peaches, nectarines or even strawberries.

Tips:

  • This would be a delicious appetizer using thinly sliced pieces of French bread.

  • To pit any stone fruit, cut the fruit in half, running along the pit and going through the stem area. Twist the halves in different directions and the two halves will separate. Use a pairing knife, or your finger, to dig out the pit from one of the halves. The riper the fruit, the easier this will be.

Cherry and Ricotta Toast

Serves 2

PREP 10 minutes

INGREDIENTS

2 thick slices of good quality bread

1/2 cup ricotta, divided

About 12 cherries, pitted

olive oil

Flakey sea salt

INSTRUCTIONS

  1. Toast your bread slices to a golden brown.

  2. Slather on the ricotta across the two slices of bread.

  3. Arrange the pitted cherries, covering all that creamy ricotta.

  4. Drizzle some good olive oil across both slices of toast. Sprinkle sea salt on the toasts and enjoy immediately.
