Peach and Burrata Salad

In the height of the summer, when no one wants to turn on the stove, this is a beautiful and delicious appetizer or salad to serve.   Most people will expect tomatoes in a salad like this, but the sweetness of the peaches compliments the cheese so well. With so few ingredients it’s important to get the best ingredients. Local fruit and cheese will make all the difference in flavors.

Tips:

  • If you don’t like peaches or can’t find them you can substitute any stone fruit you like- apricots, plums, nectarines.

  • When you are grilling fruit, you want them to be a little firm. If the fruit is too ripe, it will fall apart while cooking. If your fruit is that ripe, then don’t bother grilling the fruit, just serve them uncooked.

Peach and Burrata Salad

Serves 8

PREP 10 minutes

COOK 5 minutes

INGREDIENTS

1 1/4 pounds peaches, pitted and halved

1/4 cup extra-virgin olive oil, plus more for brushing

Sea salt and freshly ground pepper

1 1/2 tablespoons fresh lemon juice

1 small head radicchio or other tender lettuce, cored and thinly sliced

1/2 pound burrata cheese, shredded

4 ounces shaved prosciutto, optional

Pumpkin seeds or sunflower seeds

1 tablespoon local honey

INSTRUCTIONS

  1. Light a grill or preheat a grill pan. Brush the peaches with oil and season with salt and pepper. Grill over high heat, cut sides down, just until lightly charred, 5 minutes. Let cool and cut into quarters.

  2. In a bowl, whisk the lemon juice with the 1/4 cup of oil and season with salt and pepper. Gently toss in the peaches and lettuces. Transfer to a platter and top with the burrata, ham and honey. Toss some seeds on top and serve proudly.
