Agrodolce Pork Chops

Agrodolce is a sweet and sour sauce in Italian. The pork chops are simply grilled then coated in this honey-balsamic based sauce which thickens on the pork creating a sticky coating that’s delicious! You can make this dish on your grill or even on a grill pan in your kitchen. It would be delicious on chicken or a pork tenderloin too.

Tips:

  • I love the taste of rosemary, but I know it isn’t loved by everyone. You can swap out thyme.

  • The sugars in the sauce will burn quickly, so don’t walk away while basting the pork chops.

  • Cooked pork should register 165 degrees. Remove the pork before it reaches that temperature since it will continue to cook as it rests.

Agrodolce Pork Chops

Serves 4

PREP 10 minutes

COOK 20 minutes

INGREDIENTS

Sauce

1/2 cup balsamic vinegar

2 cloves garlic, peeled and smashed 

4 sprigs fresh rosemary

3 tablespoons honey 

3 tablespoons butter, at room temperature 

Grill

4 center-cut pork loin chops, bone in (about 12 ounces each) 

Kosher salt and freshly ground black pepper 

2 tablespoons olive oil 

INSTRUCTIONS

  1. Make the Sauce: Place the balsamic, rosemary and garlic in a small saucepan. Bring the mixture to a boil, then simmer for about 5 minutes as it reduces to half. Add the honey and continue to cook for another 5 minutes as it thickens. Remove the sauce from the heat and add the butter. Divide the sauce in half using some for basting the chops and the rest for finishing the dish.

  2. Preheat a grill over medium-high heat.

  3. Simply dress the dry pork chops with olive oil, salt and pepper.

  4. Grill the chops for about 5 minutes on the first side, depending on thickness. Baste the cooked side with sauce and continue to cook the other side for about 5 minutes. Baste that side too once cooked.

  5. You can baste each side once more, creating more of a glaze on the pork.

  6. Remove the chops from the grill and tent on your platter for 5 minutes to allow the meat to rest. Drizzle the remaining sauce and some fresh rosemary on the platter for serving.
