Shredded Chicken Tacos

This is the easiest way to get delicious shredded chicken for your taco night. Fill your crockpot in the morning with these ingredients and 6 hours later you have dinner ready and your house smelling amazing. Also shown here are Patatas Bravas which may be one of my favorite things to eat.

Tips:

  • Use the chicken for nachos and quesadillas too. This can also be frozen for several months.

  • Making your own taco seasoning allows you to control the sodium and level of heat. Make it once and store it in your pantry. Shake the mixture before you use it to distribute the ingredients. Of course you can use the prepackaged stuff too.

Shredded Chicken

Serves 6 with leftovers

PREP 5 minutes

COOK 4-6 hours

INGREDIENTS

1 cup jarred salsa of your choice

1 naval orange, juiced

2 tablespoons homemade taco seasoning or a package of your favorite brand

2 lb. boneless, skinless chicken breast or thighs

Kosher salt and black pepper, to taste

TACO SEASONING

¼ cup chili powder

2 tablespoons ground cumin

2 teaspoons paprika

2 teaspoons sea salt

2 teaspoons freshly ground black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes

TO SERVE

Fresh cilantro, taco shells, shredded cheese, diced tomatoes, shredded lettuce, additional salsa, sour cream…

INSTRUCTIONS

  1. Place the juice of the orange, taco seasoning and salsa in the crockpot. Mix together.

  2. Add the chicken, nestling it into the sauce.

  3. Cook the chicken on high for 4 hours or on low for 6 hours.

  4. Remove the chicken from the crockpot and shred it using two forks.

  5. Return the chicken back to the crockpot and mix it into the sauce. Adjust seasoning with salt and pepper.

  6. Serve the chicken alongside your favorite taco ingredients. Enjoy!
